Tokyo Joe’s is one of Colorado’s favorite hometown restaurants. Born in 1996, the Japanese fast-casual restaurant is known for its rice bowls, salads and sushi. There are 24 locations in Colorado. (They also now have locations in Arizona and Texas.) The Denver West location at 14227 W. Colfax Ave. opened 25 years ago in April 1998.
